Family Watermill of 1888: a little paradise that will always be our Ithaca…
Grain milling, which has been the main family activity for 3 generations, today means innovation, inspiration and the creation of unique recipes and flavors for Septem Microbrewery.
The Mill signifies evolution, change in the course of life, the "turns" that time brings and the constant search…
The "heretical" recipe of MYLOS 1888 is dedicated to those who gave us the opportunity to express our creativity through brewing.
Lager beers have been associated in the mind of the consumer with neutral beers, without bitterness and without flavor intensities and flare-ups.
Our goal was to create a "heretical" diversified Lager, using barley malts with various roasts and roasts, as well as wheat malts that would add sweetness and smoothness to the taste.
With a complex malty character that is the basis of this beer category, we chose the following three hops to bring out the aromatic character and give a mild subtle bitterness: the American Sabro, launched only in 2018 and usually used in IPAs characterized by explosive aromas of citrus, tangerine and exotic fruits, the Slovenian Bobek, a "noble" variety with floral aromas and mild bitterness, and the German Hallertau Mellon characterized by aromas of melon, honey and overripe strawberry.
By using a large amount of hops at the end of the brew, we kept the bitterness of our recipe low and harmoniously married the malty character of the beer with the citrus, honey and exotic fruit aromas from the hops.
The differentiation in the fermentation temperatures and the choice of an unusual lager yeast highlighted the crispy and refreshing character in the taste.
The bright golden color and the solid white foam are the ideal welcome to our glass.
The aromatic intensity and the harmonious coexistence of the malty and floral-fruity character, the balance in taste, the relatively low alcohol, the mild-distinctive bitterness and the strongly aromatic aftertaste, compose the taste profile of the "heretical" recipe of MYLOS 1888.
